Ingredients
Scale
1 cup rolled oats
2 cups water or milk (dairy or non-dairy)
1/2 teaspoon ground cinnamon (plus more for topping)
1/4 teaspoon salt
1 medium apple, peeled and diced
1 tablespoon butter or coconut oil
1 tablespoon brown sugar
1 teaspoon pure maple syrup (optional, for serving)
1 tablespoon chopped pecans (optional, for serving)

Prepare the apples: In a small skillet over medium heat, melt the butter or coconut oil. Add the diced apple and brown sugar. Cook for 5 to 7 minutes, stirring occasionally, until the apples are tender and lightly caramelized. Stir in 1/4 teaspoon of cinnamon during the last minute of cooking. Set aside.
Combine oats: In a medium saucepan, combine the rolled oats, water or milk, 1/2 teaspoon of cinnamon, and salt.
Cook the oatmeal: Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to low. Simmer, stirring occasionally, for 5 to 7 minutes, or until the oats reach your desired creamy consistency.
