Create a showstopping layered dessert with this easy, no-bake Baileys Chocolate Cheesecake Trifle. It combines rich chocolate crumbles, creamy cheesecake filling, and a decadent Irish cream flavor perfect for any celebration.

Ingredients

Scale
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Baileys Irish Cream liqueur
  • 1 cup heavy whipping cream, cold
  • 1 package (3.9 ounces) instant chocolate pudding mix
  • 1 1/2 cups cold milk
  • 1 package (14.3 ounces) chocolate sandwich cookies (like Oreos), crushed
  • 1 cup chocolate fudge sauce, for drizzling

Instructions

  1. Prepare the chocolate cookie layer: Place the chocolate sandwich cookies in a food processor and pulse until fine crumbs form. Set aside about 1/2 cup of the crumbs for the topping.
  2. Make the cheesecake filling: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Slowly mix in the Baileys Irish Cream until fully incorporated. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  3. Prepare the chocolate pudding layer: In a medium bowl, whisk together the instant chocolate pudding mix and cold milk for about two minutes until it begins to thicken. Let it sit for five minutes.
  4. Assemble the trifle: Use a large glass trifle bowl or individual serving glasses. Start with a layer of half the crushed chocolate cookies on the bottom.
  5. Add the first filling layer: Spread half of the Baileys cheesecake mixture evenly over the cookie layer.
  6. Add the second filling layer: Gently spoon all of the chocolate pudding mixture over the cheesecake layer.
  7. Add the final filling layer: Top the pudding with the remaining Baileys cheesecake mixture.
  8. Chill: Cover the trifle and refrigerate for at least four hours, or preferably overnight, to allow the layers to set firmly.
  9. Serve: Before serving, sprinkle the reserved crushed cookies over the top. Drizzle generously with chocolate fudge sauce.

Notes

  • For an extra boozy kick, you can soak the cookie crumbs lightly with a tablespoon of Baileys before layering them in the bottom of the bowl.
  • If you prefer a thicker, richer chocolate layer, substitute the instant pudding with a homemade chocolate mousse recipe.
  • This dessert is best served cold directly from the refrigerator.
