Make a moist, high-protein quick bread using ripe bananas and cottage cheese. This simple recipe delivers great flavor and texture for an everyday breakfast or snack.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup ripe mashed bananas (about 3 medium)
  • 1 cup low-fat cottage cheese, blended until smooth
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F. Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set this dry mixture aside.
  3. In a large bowl, combine the mashed bananas, smooth cottage cheese, sugar, melted butter, eggs, and vanilla extract. Mix these wet ingredients until they are just combined.
  4. Add the dry ingredient mixture to the wet ingredients. Mix gently with a spatula until you see no streaks of flour remaining. Do not overmix the batter.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.

Notes

  • For the smoothest texture, blend your cottage cheese in a food processor or blender until completely smooth before adding it to the wet ingredients. This prevents lumps.
  • Use very ripe, spotty bananas for the best sweetness and moisture in this banana bread recipe.
  • If you prefer a less sweet loaf, reduce the sugar to 1/3 cup.
