1 pound linguine
1 pound sirloin steak, thinly sliced
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup unsalted butter
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Salt and black pepper to taste
Instructions
Cook linguine according to package directions. Reserve 1 cup of pasta water before draining.
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add steak and sear for 1-2 minutes per side until browned. Remove steak from skillet and set aside.
Add butter to the same skillet and melt. Add minced garlic and cook until fragrant, about 1 minute.
Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce is smooth.
Add drained linguine and reserved pasta water to the skillet. Toss to coat pasta in the sauce.
Return the seared steak to the skillet. Toss everything together until well combined and heated through.
Stir in chopped parsley. Season with salt and pepper to taste.
Serve immediately.
Notes
For extra flavor, you can marinate the steak in soy sauce and Worcestershire sauce for 30 minutes before searing.
If the sauce is too thick, add a little more reserved pasta water until it reaches your desired consistency.
Garnish with extra Parmesan cheese and parsley before serving.
