Easy Beef Taco Casserole

A simple, one-dish Tex-Mex bake featuring seasoned ground beef, beans, corn, and cheese layered with tortillas. This family-friendly recipe is perfect for weeknights and can be adapted for the freezer.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) refried beans
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 810 corn tortillas, cut into wedges
  • 1/2 cup sour cream (optional)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  3. Stir in the taco seasoning and 1/2 cup of water. Cook according to seasoning packet directions.
  4. In a large bowl, combine the cooked ground beef mixture, refried beans, corn, and diced tomatoes and green chilies. Mix well.
  5. Spread half of the beef mixture into the bottom of a 9×13 inch baking dish.
  6. Layer half of the tortilla wedges over the beef mixture.
  7. Sprinkle half of the shredded cheese over the tortillas.
  8. Repeat the layers with the remaining beef mixture, tortilla wedges, and cheese.
  9. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  10. Let stand for 5 minutes before serving. Garnish with sour cream and cilantro, if desired.

Notes

  • For a freezer-friendly version, assemble the casserole as directed but do not bake. Cover tightly with plastic wrap and then foil. Freeze for up to 3 months. Thaw overnight in the refrigerator and bake as directed, adding a few extra minutes to the baking time if needed.
  • You can substitute ground turkey or chicken for the ground beef.
  • Add a layer of your favorite salsa for extra flavor.
