Classic Peach Bellini Recipe: Simple Prosecco Cocktail for Brunch

Learn how to make the classic Italian Bellini cocktail using fresh peach puree and chilled Prosecco. This simple, low-alcohol drink is perfect for weekend brunch or any celebration.

  • 1 cup fresh or frozen peach puree (thawed if frozen)
  • 1 bottle (750 ml) chilled Prosecco or dry sparkling wine
  • Optional: 1 teaspoon simple syrup or sugar, to taste

Instructions

  1. Prepare the peach puree. If using fresh peaches, peel, pit, and blend them until completely smooth. If using frozen peaches, blend them until smooth, adding a tiny splash of water if needed to start the blender.
  2. Chill your serving glasses, such as champagne flutes, in the freezer for at least 10 minutes.
  3. If your puree is not sweet enough, stir in simple syrup or sugar until you reach your desired sweetness level.
  4. Pour about 2 tablespoons of the peach puree into the bottom of each chilled flute.
  5. Slowly top the puree with the chilled Prosecco. Pour gently down the side of the glass to maintain the bubbles.
  6. Stir very lightly once to combine the layers. Serve immediately.

Notes

  • For an easy variation, try a Strawberry Bellini by substituting strawberry puree for peach puree.
  • To make this a low-alcohol drink, use a non-alcoholic sparkling wine instead of Prosecco.
  • If you want a festive touch for holidays, add a splash of raspberry liqueur to the peach puree before adding the Prosecco.
