2 large yellow onions, thinly sliced
2 tablespoons unsalted butter
1 teaspoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/2 teaspoon granulated sugar
16 ounces sour cream, full fat, chilled
8 ounces cream cheese, softened
1 tablespoon fresh chives, chopped (for garnish)
Instructions
Combine the sliced onions, butter, and olive oil in a large, heavy-bottomed skillet over medium heat. Stir to coat the onions.
Reduce the heat to medium-low. Cook the onions slowly, stirring every 5 to 10 minutes, for 40 to 50 minutes until they are deep golden brown and fully caramelized. Do not rush this step.
Stir in the salt, pepper, Worcestershire sauce, and sugar during the last 5 minutes of caramelization. Remove the onions from the heat and let them cool completely to room temperature.
In a large bowl, beat the softened cream cheese until smooth. Add the chilled sour cream and mix until just combined and creamy.
Fold the cooled caramelized onions into the sour cream and cream cheese mixture. Mix until the onions are evenly distributed.
Cover the dip and refrigerate for at least 4 hours, or preferably overnight. This allows the flavors to fully meld.
Before serving, taste and adjust seasoning if needed. Garnish the top with fresh chopped chives. Serve cold with chips, crackers, or vegetables.
Notes
For the best flavor, use full-fat sour cream. Low-fat versions can make the dip watery.
If you are short on time, you can caramelize the onions a day ahead and store them in the refrigerator.
This dip tastes better the next day, so plan to make it ahead for your party.
