Instructions

  1. Prepare the chicken: If you are not using pre-cooked chicken, cook chicken breasts until done, let them cool slightly, and shred them finely.
  2. Cook the bacon: Cook the bacon until it is very crisp. Drain it well on paper towels and then crumble it into small pieces.
  3. Chop vegetables: Chop the romaine lettuce into small, bite-sized pieces. Halve the tomatoes. Keep the lettuce and tomatoes separate for now to maintain crunch.
  4. Make the dressing: In a medium bowl, whisk together the mayonnaise, Greek yogurt (if using), Dijon mustard, apple cider vinegar, and garlic powder. Season with salt and pepper. This is your creamy aioli base.
  5. Combine main ingredients: Add the shredded chicken to the dressing mixture. Gently fold until the chicken is evenly coated.
