Make this rich, creamy, and decadent boozy hot chocolate featuring bourbon and Bailey’s Irish Cream. It is a perfect warm cocktail for cold winter nights or holiday gatherings.

Ingredients

Scale
  • 2 cups Whole Milk
  • 1 cup Heavy Cream
  • 4 ounces good quality bittersweet chocolate, chopped
  • 2 tablespoons Unsweetened Cocoa Powder
  • 2 tablespoons Granulated Sugar
  • Pinch of Salt
  • 1.5 ounces Bourbon (use a smooth variety)
  • 1 ounce Bailey’s Irish Cream
  • Whipped cream and chocolate shavings for topping

Instructions

  1. Combine the milk and heavy cream in a medium saucepan over medium heat. Heat the mixture until it just begins to steam around the edges, but do not let it boil.
  2. Remove the saucepan from the heat. Whisk in the chopped chocolate until it is completely melted and the mixture is smooth.
  3. Whisk in the cocoa powder, sugar, and salt until no lumps remain. Return the saucepan to low heat and cook, stirring constantly, for 2 to 3 minutes until the mixture thickens slightly. Do not allow it to boil.
  4. Remove the saucepan from the heat again. Stir in the bourbon and Bailey’s Irish Cream until fully combined.
  5. Pour the boozy hot chocolate into two mugs. Top each serving generously with whipped cream and a sprinkle of chocolate shavings. Serve immediately.

Notes

  • For a richer chocolate flavor, use real melted chocolate instead of relying only on cocoa powder. This step creates a truly decadent winter drink.
  • If you prefer a different spirit, substitute the bourbon with 1.5 ounces of dark rum or peppermint schnapps for a festive twist on this adult hot chocolate recipe.
  • To prepare a hot chocolate bar, set out toppings like marshmallows, cinnamon sticks, caramel sauce, and extra liqueurs so guests can customize their spiked cocoa drinks.
