An impressive yet easy chicken dinner featuring tender chicken breasts stuffed with a savory broccoli and cheese filling. This low-carb dish is perfect for a weeknight meal or for entertaining guests.

  • 4 boneless, skinless chicken breasts
  • 1 cup broccoli florets, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cream cheese, softened
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the chopped broccoli, cheddar cheese, cream cheese, and minced garlic. Season with salt and pepper. Mix well until thoroughly combined.
  3. Place each chicken breast on a cutting board. Carefully cut a pocket into the thickest side of each chicken breast, being careful not to cut all the way through.
  4. Stuff the broccoli and cheese mixture evenly into the pockets of each chicken breast.
  5. Drizzle the stuffed chicken breasts with olive oil and season the outside with salt and pepper.
  6. Place the stuffed chicken breasts in a baking dish.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the filling is bubbly and melted.
  8. Let the chicken rest for a few minutes before serving.

Notes

  • For an extra cheesy topping, sprinkle a little more cheddar cheese over the chicken during the last 5 minutes of baking.
  • You can substitute Gruyere or Monterey Jack cheese for the cheddar.
  • Serve with your favorite low-carb side dishes.
