1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tbsp olive oil
1 tsp dried oregano
0.5 tsp garlic powder
Salt and black pepper to taste
1 cup cherry tomatoes, diced
0.25 cup fresh basil, chopped
1 clove garlic, minced
1 tbsp balsamic glaze
Optional: 0.25 cup shredded mozzarella cheese
Instructions
Preheat your oven to 400°F (200°C).
In a bowl, toss chicken pieces with olive oil, oregano, garlic powder, salt, and pepper.
Spread the seasoned chicken in a single layer on a baking sheet.
Bake for 15-20 minutes, or until the chicken is cooked through and no longer pink in the center.
While the chicken bakes, prepare the bruschetta topping: In a small bowl, combine diced cherry tomatoes, chopped basil, and minced garlic.
Once the chicken is cooked, remove it from the oven. Spoon the tomato-basil mixture over the chicken.
Drizzle with balsamic glaze. If using, sprinkle mozzarella cheese over the top.
Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
Serve immediately.
Notes
For a low-carb option, omit any added sugar in the balsamic glaze and serve with a side salad.
You can prepare the bruschetta topping ahead of time and store it in the refrigerator.
If you prefer a skillet meal, sear the chicken in an oven-safe skillet, then top with bruschetta and finish under the broiler for a few minutes.
