A quick and flavorful weeknight meal featuring tender chicken topped with fresh tomato and basil bruschetta. Perfect for a healthy and satisfying dinner.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes, diced
  • 0.25 cup fresh basil, chopped
  • 1 clove garlic, minced
  • 1 tbsp balsamic glaze
  • Optional: 0.25 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss chicken pieces with olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread the seasoned chicken in a single layer on a baking sheet.
  4. Bake for 15-20 minutes, or until the chicken is cooked through and no longer pink in the center.
  5. While the chicken bakes, prepare the bruschetta topping: In a small bowl, combine diced cherry tomatoes, chopped basil, and minced garlic.
  6. Once the chicken is cooked, remove it from the oven. Spoon the tomato-basil mixture over the chicken.
  7. Drizzle with balsamic glaze. If using, sprinkle mozzarella cheese over the top.
  8. Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  9. Serve immediately.

Notes

  • For a low-carb option, omit any added sugar in the balsamic glaze and serve with a side salad.
  • You can prepare the bruschetta topping ahead of time and store it in the refrigerator.
  • If you prefer a skillet meal, sear the chicken in an oven-safe skillet, then top with bruschetta and finish under the broiler for a few minutes.
  • This recipe is great for meal prep; leftovers can be enjoyed cold or reheated.
