24 full graham crackers
1 cup creamy peanut butter
1 cup powdered sugar
1 teaspoon vanilla extract
12 ounces semi-sweet chocolate chips
2 tablespoons shortening or coconut oil
Instructions
Prepare the peanut butter filling: In a medium bowl, mix the creamy peanut butter, powdered sugar, and vanilla extract until the mixture is smooth and well combined.
Assemble the sandwiches: Place one graham cracker flat side up. Spread about 1 tablespoon of the peanut butter mixture evenly over the graham cracker. Top with a second graham cracker, pressing gently to form a sandwich. Repeat until you have 12 sandwiches.
Chill the sandwiches: Place the assembled sandwiches on a baking sheet lined with parchment paper. Put the sheet in the freezer for 15 minutes to allow the filling to firm up slightly.
