Make this Southern Fried Cabbage with bacon for a quick, flavorful side dish. It uses simple ingredients and cooks in under 20 minutes, making it perfect for weeknight family dinners.
Place a large skillet over medium heat. Add the chopped bacon and cook until crisp. Remove the bacon pieces with a slotted spoon and set them aside, leaving the rendered bacon grease in the skillet.
Add the sliced onion to the skillet with the bacon grease. Cook for 3 to 4 minutes until the onion softens.
Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let the garlic burn.
Add the thinly sliced cabbage to the skillet. Toss it with the onions and garlic. Cook, stirring occasionally, for about 5 minutes until the cabbage starts to wilt.
Pour in the chicken broth and apple cider vinegar. Stir well to combine.
Cover the skillet and let the cabbage steam for 5 to 7 minutes, or until the cabbage reaches your desired tenderness. You want it tender but not mushy.
Remove the lid. Cook for 1 to 2 minutes more, allowing any remaining liquid to evaporate.
Stir in the salt and pepper. Taste and adjust seasoning if needed.
Serve the Southern Fried Cabbage immediately, topped with the reserved crispy bacon pieces.
Notes
For a low carb cabbage meal, skip adding any sugar, which some traditional recipes call for.
If you prefer a crispier texture, cook the cabbage uncovered for a longer time, stirring frequently, instead of steaming it covered.
This recipe works well as a side dish or mixed with ground beef for a hearty cabbage dinner idea.
