Make this rich and creamy cheeseburger soup in your slow cooker for an easy, satisfying weeknight dinner. It brings all the classic flavors of a cheeseburger into a warm, comforting bowl.

  • 1.5 lbs ground beef
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 large potatoes, peeled and diced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 cup milk (whole or 2%)
  • 8 ounces cream cheese, cubed
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream (for topping)
  • Optional toppings: cooked bacon bits, chopped green onions, pickle relish

Instructions

  1. Place the ground beef, chopped onion, and minced garlic into the basin of your slow cooker. Cook on HIGH for 1 hour, breaking up the beef as it cooks. Drain off any excess grease.
  2. Add the beef broth, diced potatoes, Italian seasoning, salt, and pepper to the slow cooker. Stir to combine.
  3. Cover and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the potatoes are tender.
  4. In a small bowl, whisk together the flour and milk until smooth. Pour this mixture into the slow cooker. Stir well.
  5. Add the cubed cream cheese and shredded cheddar cheese. Stir gently until both cheeses are completely melted and the soup is creamy. This may take about 15 minutes on the HIGH setting with the lid slightly ajar.
  6. Taste the soup and adjust salt and pepper if needed.
  7. Serve hot, topped with a dollop of sour cream and your favorite burger toppings like bacon bits or green onions.

  • For a quicker stovetop version, brown the beef and sauté the onions before adding liquids and simmering.
