1 (30 ounce) bag frozen shredded hash brown potatoes, thawed
1 (10.5 ounce) can condensed cream of chicken soup
1 cup sour cream
1/2 cup (1 stick) unsalted butter, melted
1 cup shredded sharp cheddar cheese, plus 1/2 cup for topping
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup crushed cornflakes
2 tablespoons melted butter (for topping)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the thawed hash brown potatoes, cream of chicken soup, sour cream, 1/2 cup of melted butter, 1 cup of shredded cheddar cheese, salt, and pepper. Mix everything together until it is fully combined and creamy.
Spread the potato mixture evenly into your prepared baking dish.
In a small bowl, mix the crushed cornflakes with the remaining 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the potato casserole. Sprinkle the remaining 1/2 cup of cheddar cheese over the cornflakes.
Bake for 45 to 55 minutes, or until the casserole is hot throughout and the topping is golden brown and crisp.
Let the Cheesy Potato Casserole rest for 5 to 10 minutes before you serve it.
Notes
You can prepare this casserole the day before. Cover it tightly and refrigerate. When ready to bake, add about 10 to 15 minutes to the covered baking time before uncovering and finishing the bake.
For a richer flavor, substitute the cream of chicken soup with cream of mushroom soup.
If you want a sharper cheese flavor, use all sharp cheddar cheese in the mix and topping.
