Make this comforting, bright, and creamy Greek Lemon Chicken Rice Soup, known as Avgolemono. This recipe uses simple ingredients to create a deeply flavorful soup without any heavy cream.

  • 6 cups low-sodium chicken broth
  • 1 cup cooked, shredded chicken breast
  • 1/2 cup long-grain white rice
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 1/4 teaspoon ground black pepper
  • Pinch of salt, if needed

Instructions

  1. Pour the chicken broth into a large pot and bring it to a simmer over medium-high heat.
  2. Add the cooked, shredded chicken and the white rice to the simmering broth. Reduce the heat to medium-low, cover, and cook for 15 to 20 minutes, or until the rice is tender. Stir occasionally to prevent sticking.
  3. While the rice cooks, prepare the egg-lemon mixture (the avgolemono). In a medium bowl, whisk together the eggs, cornstarch, and black pepper until completely smooth. This step is important for a creamy texture.
  4. Temper the egg mixture: Scoop about 1 cup of the hot broth from the soup pot into the egg mixture while whisking constantly. This slowly raises the temperature of the eggs without scrambling them.
  5. Slowly pour the tempered egg mixture back into the soup pot in a thin stream, whisking the soup continuously as you pour. Do not let the soup boil after adding the eggs.
  6. Remove the pot from the heat immediately. Stir in the fresh lemon juice. Taste the soup and add a small pinch of salt only if your broth was unsalted.
  7. Let the soup sit, uncovered, for 5 minutes before serving. The soup will thicken slightly as it cools.

Notes

  • For the best flavor, use homemade chicken broth if possible.
  • Do not allow the soup to boil after adding the egg mixture, or the eggs will curdle. Keep the heat low.
  • If you prefer a thicker soup, increase the cornstarch to 3 tablespoons.
  • You can use leftover rotisserie chicken for quick preparation.
