Create this flavorful chicken zucchini stir fry in under 20 minutes. It uses simple ingredients and a savory garlic-soy sauce, making it a perfect, healthy meal for busy weeknights.

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 medium zucchini, sliced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Salt and pepper to taste
  • Sesame seeds, for garnish (optional)

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, brown sugar or honey, rice vinegar, and sesame oil. Set aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the minced garlic and grated ginger to the same skillet. Sauté for about 30 seconds until fragrant. Do not let the garlic burn.
  4. Add the sliced zucchini to the skillet. Cook, stirring occasionally, for 3 to 4 minutes until the zucchini is tender-crisp. We want it cooked but still holding its shape.
  5. Return the cooked chicken to the skillet with the zucchini.
  6. Pour the prepared sauce mixture over the chicken and vegetables. Stir to coat everything evenly.
  7. Pour the cornstarch slurry into the skillet while stirring constantly. Cook for 1 minute until the sauce thickens slightly.
  8. Taste and add salt and pepper if needed.
  9. Serve the chicken zucchini stir fry immediately, garnished with sesame seeds if desired. This is great over steamed rice or noodles for a complete meal.

Notes

  • For a low-carb option, skip the rice or noodles and serve this dish as is.
  • If you prefer darker meat, substitute chicken thighs for the breast. Cook time may increase slightly.
  • You can add other quick-cooking vegetables like sliced mushrooms or bell peppers along with the zucchini.
