2 large eggs

For the Streusel Topping:
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 cup unsalted butter, cold and cubed
For the Glaze (Optional):
1 cup powdered sugar
2–3 tablespoons milk
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt for the muffin batter.
Add the softened butter to the dry ingredients and mix with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
In a separate small bowl, whisk together the eggs, buttermilk, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Prepare the streusel topping: In a medium bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture forms coarse crumbs.
Divide half of the muffin batter evenly among the prepared muffin cups.
Sprinkle a generous amount of the streusel topping over the batter in each cup.
Top with the remaining muffin batter, filling each cup about two-thirds full.
Sprinkle the remaining streusel topping over the batter.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
If making the glaze, whisk together the powdered sugar and milk until smooth. Drizzle over the cooled muffins.

For taller domes, ensure your oven is fully preheated and avoid overfilling the muffin cups.
