Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a small loaf pan (about 8×4 inches) or line it with parchment paper.
  2. Place the cottage cheese and eggs into a food processor or a high-powered blender. Blend until the mixture is completely smooth and creamy. You should not see any curds remaining; this step is key for a smooth texture.
  3. If using, stir in the Italian seasoning now.
  4. Pour the smooth batter into your prepared loaf pan.
  5. If desired, sprinkle the top evenly with everything bagel seasoning.
  6. Bake for 30 to 35 minutes, or until the bread is set in the center and lightly golden brown on top.
  7. Remove the bread from the oven and let it cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely.
  8. Once fully cooled, slice the bread. This bread is best enjoyed fresh or stored in an airtight container in the refrigerator.
