  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 cup chopped bacon
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup chicken broth
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup milk
  • 4 ounces cream cheese, cubed
  • 1 packet dry ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup fresh spinach
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the pot.
  3. Add the seasoned chicken to the pot and cook until browned on all sides and cooked through. Remove the chicken and set it aside with the bacon.
  4. Add the gnocchi and chicken broth to the pot. Bring to a simmer and cook according to package directions until the gnocchi is tender.
  5. Stir in the cream of chicken soup, milk, cream cheese, and ranch seasoning mix. Stir constantly until the cream cheese melts and the sauce is smooth.
  6. Return the cooked chicken to the pot. Stir in the shredded cheddar cheese until melted and the sauce is creamy.
  7. Stir in the fresh spinach until it wilts into the sauce.
  8. Serve immediately, topped with the reserved crispy bacon.

Notes

  • For extra flavor, use pre-cooked rotisserie chicken instead of raw chicken breast.
  • If the sauce seems too thick, add a splash more milk until you reach your desired consistency.
  • This dish is excellent served with crusty bread for dipping.
