  • 4 cups sweet corn kernels (fresh or frozen)
  • 4 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Place a large skillet over medium heat. Add the butter and let it melt completely.
  2. Add the corn kernels to the skillet. Cook, stirring occasionally, for 5 to 7 minutes until the corn is heated through and slightly tender.
  3. Stir in the honey, salt, and pepper. Cook for 1 minute, allowing the honey to coat the corn.
  4. Pour in the heavy cream. Bring the mixture to a gentle simmer, stirring constantly.
  5. Reduce the heat to low. Continue to cook for 3 to 5 minutes, stirring often, until the cream has thickened slightly and coats the corn kernels, creating a creamy texture. Do not boil rapidly.
  6. Remove the skillet from the heat. Taste and adjust salt or pepper if needed.
  7. Garnish with fresh chopped parsley before serving immediately.

Notes

  • If you use frozen corn, you do not need to thaw it before adding it to the skillet.
  • For a richer flavor, use fresh corn cut from the cob.
  • This side dish is excellent for potlucks because it travels well when kept warm.
