A quick and easy one-pot pasta dish with a bright lemon and creamy Parmesan sauce, perfect for busy weeknights.

Ingredients

  • 12 ounces spaghetti
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add minced garlic and red pepper flakes and cook until fragrant, about 1 minute.
  2. Add the spaghetti, broth, and heavy cream to the pot. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the pasta is al dente and the sauce has thickened, about 10-12 minutes.
  3. Stir in the grated Parmesan cheese, lemon juice, and lemon zest. Season with salt and pepper to taste.
  4. Garnish with fresh parsley before serving.

  • For a lighter version, substitute Greek yogurt for half of the heavy cream.
