Creamy Crockpot Chicken, Rice, and Broccoli Casserole

Make a complete, comforting family dinner with this easy, set-it-and-forget-it slow cooker chicken and rice recipe featuring tender broccoli.

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup uncooked long-grain white rice
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups frozen broccoli florets
  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Place the chicken breasts or thighs in the bottom of your slow cooker insert.
  2. In a separate bowl, whisk together the cream of chicken soup, cream of mushroom soup, chicken broth, onion powder, garlic powder, salt, and pepper until smooth.
  3. Pour the soup mixture evenly over the chicken in the slow cooker.
  4. Sprinkle the uncooked rice directly over the liquid mixture. Do not stir.
  5. Cover and cook on LOW for 3 to 4 hours, or on HIGH for 1.5 to 2 hours, until the chicken is cooked through and easily shredded.
  6. Remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker.
  7. Stir in the frozen broccoli florets.
  8. Cover and cook on LOW for an additional 30 minutes, or until the broccoli is tender-crisp.
  9. If using cheese, sprinkle the shredded cheddar over the top during the last 10 minutes of cooking, or turn the slow cooker to the WARM setting until melted.
  10. Stir everything gently before serving this easy slow cooker chicken meal.

Notes

  • For best results with rice in the slow cooker, avoid stirring after adding the rice and liquid; this prevents the rice from becoming gummy.
  • If you prefer a less creamy dish, substitute one can of condensed soup with an extra 1/2 cup of chicken broth.
  • You can use pre-cooked or rotisserie chicken for this recipe; add it during the last hour of cooking along with the broccoli.
