  • 1.5 lbs ground beef
  • 1 large onion, chopped
  • 2 (15 ounce) cans kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Ro-Tel (diced tomatoes and green chilies), undrained
  • 4 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 cup shredded cheddar cheese for topping
  • Optional: Sour cream for topping

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  2. Place the browned ground beef, chopped onion, kidney beans, black beans, corn, diced tomatoes, Ro-Tel, and beef broth into the basin of your slow cooker.
  3. Add the chili powder, cumin, oregano, salt, and pepper to the slow cooker mixture. Stir everything together until combined.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
  5. Before serving, taste the soup and adjust seasonings if needed.
  6. Ladle the soup into bowls. Top with shredded cheddar cheese and a dollop of sour cream, if desired. Serve hot with cornbread.

  • Browning the beef first adds depth of flavor to this easy slow cooker recipe.
