A nostalgic 1980s Midwest potluck favorite featuring seasoned ground beef, crunchy Nacho Cheese Doritos, and a tangy Catalina dressing.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives
  • 1/2 cup chopped red onion
  • 1 (10 ounce) bag Nacho Cheese Doritos
  • 1 cup Catalina dressing

Instructions

  1. Cook ground beef in a skillet over medium-high heat until browned. Drain off any excess grease. Stir in taco seasoning and cook according to package directions. Let cool slightly.
  2. In a large bowl, combine shredded lettuce, cheddar cheese, cherry tomatoes, black olives, and red onion.
  3. Add the cooled taco-seasoned beef to the salad mixture.
  4. Just before serving, add the Nacho Cheese Doritos and toss gently with Catalina dressing.

Notes

  • For make-ahead convenience, layer the salad ingredients in a trifle dish or large bowl, keeping the Doritos and dressing separate until ready to serve to prevent sogginess.
  • Substitute ground turkey for a lighter option.
  • Add a layer of refried beans for extra heartiness.
