1 pound ground beef
1 packet taco seasoning
1 head iceberg lettuce, shredded
1 cup shredded cheddar cheese
1 cup cherry tomatoes, halved
1/2 cup sliced black olives
1/2 cup chopped red onion
1 (10 ounce) bag Nacho Cheese Doritos
1 cup Catalina dressing
Instructions
Cook ground beef in a skillet over medium-high heat until browned. Drain off any excess grease. Stir in taco seasoning and cook according to package directions. Let cool slightly.
In a large bowl, combine shredded lettuce, cheddar cheese, cherry tomatoes, black olives, and red onion.
Add the cooled taco-seasoned beef to the salad mixture.
Just before serving, add the Nacho Cheese Doritos and toss gently with Catalina dressing.
Notes
For make-ahead convenience, layer the salad ingredients in a trifle dish or large bowl, keeping the Doritos and dressing separate until ready to serve to prevent sogginess.
Substitute ground turkey for a lighter option.
Add a layer of refried beans for extra heartiness.
