Make this rich, creamy beer cheese dip using sharp cheddar and your favorite beer. It is a quick, crowd-pleasing appetizer perfect for game days and parties, ready in 15 minutes.

  • 8 oz sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup lager beer (like a pale ale or pilsner)
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Shred the sharp cheddar cheese if you did not buy it pre-shredded. This helps the cheese melt smoothly.
  2. In a medium saucepan over medium-low heat, whisk together the flour, garlic powder, onion powder, and cayenne pepper. Cook for 30 seconds.
  3. Slowly pour in the beer while whisking constantly to create a smooth base. Heat until the mixture just begins to simmer.
  4. Reduce the heat to low. Add the softened cream cheese and stir until it is completely melted and smooth.
  5. Add the shredded sharp cheddar cheese one handful at a time, stirring continuously until each addition is fully melted before adding the next. Do not let the mixture boil.
  6. Once all the cheese is incorporated and the dip is velvety, taste it. Add salt and pepper as needed.
  7. Keep the dip warm over very low heat or transfer it to a small slow cooker for serving.

Notes

  • For a bolder flavor, substitute half of the sharp cheddar with Gouda cheese.
  • If you want a bacon variation, cook 4 slices of bacon until crisp, crumble it, and stir it into the finished dip.
  • Serve this warm cheese dip immediately with soft pretzels, tortilla chips, crackers, or vegetable sticks.
  • If the dip gets too thick while sitting, whisk in a tablespoon of extra beer or milk to restore the smooth texture.
