  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup lager beer (like a pale ale or pilsner)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened and cubed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour to create a smooth paste, called a roux. Cook the roux for one minute, stirring constantly.
  3. Slowly pour in the beer while whisking constantly to prevent lumps. Bring the mixture to a gentle simmer and cook until it thickens slightly, about 2 minutes.
  4. Reduce the heat to low. Add the cubed cream cheese and stir until it is completely melted and smooth.
  5. Remove the saucepan from the heat. Gradually add the shredded cheddar cheese, a handful at a time, stirring until each addition is fully melted and incorporated before adding more. This keeps the sauce smooth.
  6. Stir in the salt, pepper, and cayenne pepper, if using.
  7. Serve the warm beer cheese dip immediately with soft pretzels, chips, or crackers.

Notes

  • For the creamiest texture, shred your own cheese from a block instead of using pre-shredded varieties, which contain anti-caking agents.
