1 cup long grain white rice
1 (10.5 ounce) can condensed cream of chicken soup (or cream of mushroom for a vegetarian option)
1 cup water
1 stick (8 tablespoons) unsalted butter, sliced
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 2-quart baking dish.
In the prepared baking dish, combine the uncooked rice, condensed soup, and water. Stir these ingredients together until they are fully mixed.
Arrange the slices of butter evenly over the top of the rice mixture. Do not stir the butter in.
Cover the baking dish tightly with aluminum foil.
Bake for 50 to 60 minutes, or until all the liquid is absorbed and the rice is tender. Do not lift the foil during the first 45 minutes of baking; this traps the steam needed to cook the rice properly.
Remove the dish from the oven and let it stand, covered, for 5 minutes.
Remove the foil and fluff the rice gently with a fork before serving. This is your easy side dish for dinner.
Notes
For a richer flavor, you can substitute the water with chicken broth or use French onion soup instead of cream of chicken soup.
If you need this dish faster, you can cook it on the stovetop: Combine all ingredients (except butter slices) in a saucepan. Bring to a boil, then reduce heat to low, place butter on top, cover, and simmer for 20 minutes until liquid is absorbed. Let stand 5 minutes before fluffing.
To reduce the fat content slightly without losing flavor, you can use half a stick of butter and add 2 tablespoons of chicken bouillon powder mixed into the water.
