Make this simple, flavorful Caprese chicken in one pan. It features juicy chicken breasts topped with fresh mozzarella, tomatoes, basil, and a balsamic glaze, perfect for a quick weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 cup cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced or torn into pieces
  • 1/4 cup fresh basil leaves, roughly chopped
  • 2 tablespoons balsamic glaze (or balsamic vinegar reduced slightly)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
  2. Place the chicken breasts on the prepared baking sheet. Drizzle with olive oil and sprinkle evenly with Italian seasoning, salt, and pepper.
  3. Bake the chicken for 15 minutes.
  4. Remove the pan from the oven. Top each chicken breast with the halved tomatoes and pieces of fresh mozzarella cheese.
  5. Return the pan to the oven and bake for another 5 to 8 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the cheese is melted and slightly golden.
  6. Remove from the oven. Sprinkle the fresh basil over the chicken.
  7. Drizzle the balsamic glaze over the chicken before serving.

Notes

  • For a thicker balsamic glaze, simmer 1/2 cup of balsamic vinegar in a small saucepan over medium heat until it reduces by half and coats the back of a spoon.
  • If you prefer a skillet method, sear the chicken first, then add tomatoes and cover to melt the cheese, finishing with the glaze.
  • Use fresh, ripe tomatoes for the best Caprese flavor.
