  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Season the cut chicken pieces lightly with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the trimmed green beans and cook, stirring occasionally, for 4-6 minutes until they become crisp-tender.
  4. Add the minced garlic to the skillet with the green beans and cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the honey, soy sauce, rice vinegar, ground ginger, and red pepper flakes, if using. This is your honey garlic sauce.
  6. Return the cooked chicken to the skillet with the green beans. Pour the honey garlic sauce over the chicken and vegetables.
  7. Toss everything together and cook for 1-2 minutes, allowing the sauce to thicken slightly and coat the chicken and beans evenly.
  8. Remove from heat and serve immediately.

  • For a low-carb option, substitute the honey with a sugar-free honey alternative or use a keto-friendly sweetener equivalent to 1/4 cup of honey.
  • If you want extra crispy green beans, blanch them in boiling water for 2 minutes before adding them to the skillet.
