1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can black-eyed peas, rinsed and drained
1 cup frozen or canned corn, thawed or drained
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup red onion, finely chopped
1 cup cherry or grape tomatoes, halved
1/2 cup fresh cilantro, chopped
1/4 cup olive oil
1/4 cup fresh lime juice
1 tablespoon apple cider vinegar
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Optional: 1 jalapeño, seeded and minced
Instructions
Prepare all your fresh vegetables: dice the bell peppers and onion, halve the tomatoes, and chop the cilantro. If using, mince the jalapeño.
In a large bowl, combine the rinsed and drained black beans, black-eyed peas, corn, diced bell peppers, red onion, tomatoes, cilantro, and optional jalapeño.
In a small bowl or jar, whisk together the dressing ingredients: olive oil, lime juice, apple cider vinegar, cumin, salt, pepper, and garlic powder until well combined.
Pour the zesty lime dressing over the bean and vegetable mixture.
Gently toss all the ingredients together until everything is evenly coated with the dressing.
Cover the bowl and chill the Cowboy Caviar in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld.

Notes
You can make this make ahead appetizer up to 24 hours in advance. The flavors deepen overnight.
If you prefer black-eyed peas, use them. If you prefer black beans, use two cans of black beans instead of one of each.
For an extra layer of flavor, add 1/2 cup of diced avocado just before serving.
