Create impressive, crowd-pleasing Cranberry Brie Bites using only five simple ingredients. These sweet and savory appetizers feature creamy brie and tart cranberry sauce baked inside flaky puff pastry, perfect for holiday entertaining.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, cut into small cubes
  • 1/2 cup cranberry sauce (canned or homemade)
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon chopped pecans (optional, for topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Unfold the thawed puff pastry sheet. Use a 2-inch round cookie cutter to cut out circles from the pastry. You should get about 12 to 16 circles.
  3. Place the pastry circles on the prepared baking sheet. Lightly press a small indentation into the center of each circle using your thumb or the back of a small spoon.
  4. Place one small cube of brie cheese into the indentation of each pastry circle.
  5. Top the brie with about 1/2 teaspoon of cranberry sauce. If you are using pecans, sprinkle a few pieces over the cranberry sauce.
  6. Brush the edges of the pastry lightly with the beaten egg wash. This helps them brown nicely.
  7. Bake for 12 to 15 minutes, or until the puff pastry is golden brown and puffed, and the brie cheese is melted and gooey.
  8. Remove from the oven and let the bites cool on the baking sheet for 5 minutes before serving warm.

Notes

  • For make-ahead convenience, assemble the bites completely (steps 1 through 4) and place them on the baking sheet. Cover tightly with plastic wrap and refrigerate for up to 4 hours before baking. Add 2-3 minutes to the baking time if baking straight from the refrigerator.
  • If you want a savory element, add a tiny sliver of fresh rosemary on top of the cranberry sauce before baking.
  • If you do not have a round cutter, you can cut the pastry into 2-inch squares instead.
