1 packet (1 ounce) taco seasoning mix
1 (16 ounce) can refried beans, heat until warm
8 flour tortillas (about 8 inches each)
1 tablespoon vegetable oil
1 cup shredded Mexican cheese blend
1 cup shredded Monterey Jack cheese
1 cup pizza sauce or mild enchilada sauce
1/2 cup sliced black olives (optional)
1/2 cup diced tomatoes (optional)

Instructions
Prepare the seasoned beef: In a skillet over medium heat, cook the ground beef until it is fully browned. Drain off any excess grease. Add the water and the taco seasoning mix. Stir well and bring to a simmer. Cook for 5 to 7 minutes, or until most of the liquid has evaporated and the beef is well coated. Set aside.
Crisp the tortillas: Heat the vegetable oil in a large skillet over medium heat. Place one tortilla in the hot oil and cook for about 1 to 2 minutes per side until it is golden brown and crisp. Transfer the cooked tortilla to a paper towel-lined plate to drain excess oil. Repeat this process for all eight tortillas.
Assemble the first layer: Place one crispy tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla. Top the beans with half of the seasoned ground beef. Sprinkle with half of the Mexican cheese blend and half of the Monterey Jack cheese.
Add the middle layer: Place a second crispy tortilla directly on top of the cheese layer. Spread the remaining refried beans over this tortilla, followed by the remaining seasoned beef. Top with the remaining Mexican cheese blend and Monterey Jack cheese.
Top and bake: Pour the pizza sauce or enchilada sauce evenly over the top layer of cheese. Sprinkle with black olives and diced tomatoes, if you are using them. Bake in a preheated oven at 400 degrees Fahrenheit for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
