Make this easy, moist apple cake packed with fresh apples and warm cinnamon. It is a simple dessert perfect for fall gatherings or a cozy weeknight treat.

  • 1 box yellow cake mix
  • 2 cups chopped fresh apples
  • 3 large eggs
  • 1 teaspoon ground cinnamon (optional, for extra flavor)
  • Caramel glaze ingredients (powdered sugar, milk, butter, vanilla extract)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine the yellow cake mix, chopped fresh apples, and eggs. Mix until just combined. Do not overmix.
  3. Stir in the ground cinnamon, if using.
  4. Pour the batter evenly into the prepared baking pan.
  5. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake cools slightly, prepare the caramel glaze by whisking together powdered sugar, a small amount of milk, melted butter, and vanilla extract until smooth.
  7. Drizzle the warm caramel glaze over the warm cake before serving.

Notes

  • For a richer flavor, use Granny Smith or Honeycrisp apples.
  • If you prefer a thicker cake, use an 8×8 inch pan and adjust the baking time.
  • This cake is excellent served warm with a scoop of vanilla ice cream.
