Make these simple, creamy coconut balls without turning on the oven. This recipe uses few ingredients to create a melt-in-your-mouth treat perfect for parties or quick snacks.

  • 1 (14 ounce) can sweetened condensed milk
  • 3 cups sweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips (for coating)
  • 1 tablespoon coconut oil (optional, for smoother coating)

Instructions

  1. Combine the sweetened condensed milk, shredded coconut, and vanilla extract in a medium bowl. Mix until everything is fully incorporated.
  2. Cover the bowl and chill the mixture in the refrigerator for at least 30 minutes. This makes the mixture easier to handle.
  3. Line a baking sheet with parchment paper. Scoop out about 1 tablespoon of the chilled mixture and roll it firmly between your palms to form a small ball. Place the ball on the prepared sheet. Repeat with the remaining mixture.
  4. Place the tray of rolled balls back into the refrigerator or freezer while you prepare the chocolate coating.
  5. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted.
  6. Remove the coconut balls from the cold. Dip each ball into the melted chocolate, turning to coat completely. Use a fork to lift the ball out, allowing excess chocolate to drip off.
  7. Return the coated coconut balls to the parchment-lined sheet.
  8. Chill the finished chocolate coconut balls for at least 1 hour, or until the chocolate coating is firm.

Notes

  • For a healthier option, you can substitute almond flour for some of the shredded coconut, but you may need to slightly increase the condensed milk for binding.
  • If you want a pure white center, skip the chocolate coating and roll the balls in extra dry shredded coconut or powdered sugar instead.
  • These creamy coconut bites store well in an airtight container in the refrigerator for up to one week.
