1.5 lbs ground beef (80/20 recommended)
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
1 medium yellow onion, thinly sliced
8 oz cremini mushrooms, sliced
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon dried thyme
1 teaspoon Dijon mustard
Instructions
In a medium bowl, combine the ground beef, breadcrumbs, milk, egg, salt, pepper, and Worcestershire sauce. Mix gently with your hands until just combined; do not overmix.
Form the mixture into 4 equal oval-shaped patties, about 1 inch thick.
Heat the olive oil in a large skillet over medium-high heat. Sear the beef patties for 3 to 4 minutes per side until nicely browned. Remove the patties from the skillet and set them aside.
Add the sliced onion and mushrooms to the same skillet. Cook, stirring occasionally, until the onions are soft and the mushrooms have released their liquid and started to brown, about 8 minutes.
Sprinkle the flour over the vegetables and cook for 1 minute, stirring constantly.
Slowly whisk in the beef broth until smooth. Add the dried thyme and Dijon mustard. Bring the gravy to a simmer, stirring until it thickens slightly.
Return the beef patties to the skillet, nestling them into the gravy. Reduce the heat to low, cover the skillet, and simmer for 10 to 15 minutes, or until the patties are cooked through.
Serve the Salisbury steaks immediately, spooning the rich mushroom gravy over the top. This pairs well with mashed potatoes or egg noodles.
Notes
For extra flavor in the patties, you can add 1 teaspoon of onion powder to the beef mixture.
If you prefer a darker gravy, use brown gravy mix instead of flour and broth, following package directions but incorporating the browned onions and mushrooms.
To ensure tender patties, avoid compacting the meat mixture too tightly when forming them.
