  • 1/2 cup cold milk
  • 1 large egg (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the peaches, 1 cup sugar, lemon juice, cinnamon, and nutmeg. Stir gently.
  3. Sprinkle the 1/4 cup of flour over the peach mixture and toss to coat evenly. Pour the fruit mixture into the prepared baking dish.
  4. To make the topping, whisk together the 1 1/2 cups flour, baking powder, salt, and 1/4 cup sugar in a separate bowl.
  5. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Pour in the cold milk and stir just until a shaggy dough forms. Do not overmix.
  7. Drop spoonfuls of the biscuit dough evenly over the peach filling. Leave small gaps between the biscuits.
  8. Brush the tops of the biscuits lightly with the beaten egg and sprinkle with coarse sugar.
  9. Bake for 35 to 45 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Let the cobbler cool for at least 15 minutes before serving warm.
