3 cups finely crushed sugar cookies (about 1 standard batch or 1 sleeve of store-bought cookies)
12 ounces white chocolate melting wafers or white chocolate chips
1 tablespoon vegetable shortening or coconut oil (optional, for smoother melting)

Instructions
Place the crushed sugar cookies into a medium bowl. You can crush the cookies by hand, using a food processor, or placing them in a zip-top bag and crushing them with a rolling pin.
Add the softened cream cheese and vanilla extract to the cookie crumbs.
Mix the ingredients together using a sturdy spoon or your hands until a uniform, thick dough forms. If the mixture seems too soft, chill it for 15 minutes.
Roll the dough into small balls, about 1 inch in diameter. You should get approximately 24 to 30 truffles. Place the rolled balls onto a baking sheet lined with parchment paper.
Chill the cookie balls in the refrigerator for at least 30 minutes. This step helps them firm up so they hold their shape when dipped in chocolate.
Prepare the coating: Place the white chocolate wafers (and shortening or oil, if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely smooth and melted. Do not overheat.
Remove the chilled cookie balls from the refrigerator. Dip each ball into the melted white chocolate, using a fork or a dipping tool to fully coat it. Allow excess chocolate to drip off.
Immediately place the coated truffle back onto the parchment-lined sheet. While the chocolate is still wet, top with festive sprinkles.
Allow the chocolate coating to set completely at room temperature, or speed up the process by chilling the truffles for another 15 minutes.
Store your finished sugar cookie truffles in an airtight container in the refrigerator for up to one week.

If you use store-bought cookies, choose a soft variety, like Lofthouse style, for the best texture.
For a smoother coating, add a teaspoon of vegetable shortening or coconut oil to the melting chocolate. This helps prevent the chocolate from seizing or becoming too thick.
These no-bake truffles freeze well. Place them in a freezer-safe container and freeze for up to three months. Thaw them in the refrigerator before serving.
