  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup cream cheese, softened
  • 1 cup shredded Swiss cheese
  • 1/2 cup shredded Gruyère cheese
  • 2 slices French bread, toasted (optional, for serving)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large oven-safe skillet over medium heat. Add the sliced onion and cook, stirring occasionally, for 10 to 15 minutes until the onions are soft and beginning to caramelize.
  3. Stir in the dried thyme, salt, and pepper with the onions. Cook for 1 minute more until fragrant.
  4. Place the chicken breasts in the baking dish or skillet. Pour the beef broth and Worcestershire sauce over the chicken.
  5. In a small bowl, mix the softened cream cheese until smooth. Drop small dollops of the cream cheese over the chicken breasts.
  6. Bake for 20 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  7. Remove the dish from the oven. Sprinkle the Swiss cheese and Gruyère cheese evenly over the chicken.
  8. Return the dish to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and bubbly.
  9. Let the chicken rest for 5 minutes before serving. Serve warm, perhaps with a slice of toasted French bread to soak up the juices.
