1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice
1 clove garlic, minced
1/2 cup neutral oil (like canola or grapeseed)

Black pepper to taste
Instructions
In a medium bowl, whisk together the egg yolk, Dijon mustard, and lemon juice until well combined.
Add the minced garlic to the bowl.
Slowly drizzle in the neutral oil, whisking constantly. Start with just a few drops at a time, then gradually increase the flow as the mixture begins to emulsify and thicken.
Continue whisking until all the oil is incorporated and the aioli is thick and creamy.
Season with salt and black pepper to your preference.
For a thinner consistency, whisk in a teaspoon of water.
Notes
For a smoother aioli, you can use an immersion blender or food processor.
