You can make this tender-crisp roasted broccolini quickly. This recipe uses simple ingredients to create a flavorful side dish perfect for any weeknight meal.

Ingredients

Scale
  • 1 bunch broccolini, ends trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper for easy cleanup.
  2. Place the trimmed broccolini on the prepared baking sheet.
  3. Drizzle the broccolini with olive oil. Add the minced garlic, salt, and pepper. Toss everything together with your hands until the broccolini is evenly coated. Spread the broccolini into a single layer on the sheet.
  4. Roast for 12 to 15 minutes, or until the florets are slightly browned and the stalks are tender-crisp.
  5. Remove the baking sheet from the oven. Immediately drizzle with fresh lemon juice and sprinkle with Parmesan cheese, if using.
  6. Serve this quick vegetable side dish right away.

Notes

  • To get tender-crisp broccolini, do not overcrowd the baking sheet; use two sheets if necessary.
  • You can substitute butter for olive oil for a richer flavor in this garlic butter broccolini variation.
  • This recipe is naturally gluten-free and keto-friendly.
