  • 3 large ripe tomatoes, cut into wedges
  • 1 large cucumber, peeled and sliced into thick half-moons
  • 1/2 red onion, thinly sliced
  • 1 green bell pepper, seeded and sliced
  • 1 cup Kalamata olives, whole or pitted
  • 8 ounces block feta cheese, cut into large cubes
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Cut the tomatoes into wedges, slice the cucumber, thinly slice the red onion, and slice the green pepper. Place all prepared vegetables into a large mixing bowl.
  2. Add the olives and feta: Add the Kalamata olives and the large cubes of feta cheese to the bowl with the vegetables.
  3. Make the dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, sea salt, and black pepper until fully combined.
  4. Dress the salad: Pour the homemade Greek salad dressing evenly over the salad ingredients.
  5. Toss gently: Carefully toss the salad just enough to coat the vegetables and feta with the dressing. Avoid over-mixing to keep the feta cubes intact.
  6. Serve immediately: Serve the salad right away for the best texture and flavor.

  • For the most authentic flavor, use a high-quality block of feta cheese packed in brine, not pre-crumbled.
