Make this hearty ground beef and dumplings stew for a comforting, family-friendly meal. This one-pot recipe uses simple ingredients to create a rich, savory stew topped with fluffy biscuit dumplings, perfect for a quick weeknight dinner.

  • 1 tablespoon olive oil
  • 1.5 pounds ground beef
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups beef broth
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 0.5 cup milk
  • 1 cup frozen peas
  • 1 package (10 ounces) refrigerated biscuit dough, cut into quarters

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  2. Add the chopped onion, carrots, and celery to the pot. Cook for 5 minutes until the vegetables begin to soften.
  3. Stir in the dried thyme, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the beef broth, cream of mushroom soup, and milk. Stir well to combine everything. Bring the mixture to a simmer.
  5. Once simmering, reduce the heat to low, cover the pot, and let it cook for 10 minutes to allow the flavors to blend.
  6. Stir in the frozen peas.
  7. Drop the quartered biscuit dough pieces evenly over the simmering stew. Do not stir them in.
  8. Cover the pot tightly and continue to simmer on low for 12 to 15 minutes, or until the dumplings are puffed up and cooked through. Check one dumpling to ensure the center is done.
  9. Serve immediately. This is a great budget friendly ground beef meal.

  • For richer flavor, use homemade beef broth instead of canned broth.
  • If you do not have refrigerated biscuit dough, you can make simple drop dumplings using flour, baking powder, salt, and milk.
