Make a flavorful North African-inspired chicken dinner using one pan. This recipe balances the heat of harissa with sweet honey, perfect for a quick weeknight meal or meal prep.

  • 2 lbs boneless, skinless chicken thighs (or breasts)
  • 1/4 cup harissa paste
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lb baby potatoes, halved
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/2 lemon, thinly sliced (for roasting)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together the harissa paste, honey, olive oil, lemon juice, minced garlic, cumin, salt, and pepper to create the marinade.
  3. Place the chicken thighs into the bowl and toss until fully coated. If time allows, let the chicken marinate for 15 minutes.
  4. In a separate large bowl, toss the halved potatoes, chopped bell pepper, and zucchini with 1 tablespoon of olive oil, salt, and pepper.
  5. Arrange the seasoned vegetables on the prepared baking sheet in a single layer.
  6. Place the marinated chicken pieces among the vegetables on the sheet pan. Arrange the thin lemon slices over the chicken and vegetables.
  7. Bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and slightly browned.
  8. Serve immediately, perhaps over rice or couscous for a complete meal.

Notes

  • For extra spice, add 1/2 teaspoon of cayenne pepper to the marinade.
  • If you use chicken breasts, check for doneness closer to the 20-minute mark to prevent drying out.
  • This recipe works well for meal prep; store leftovers in an airtight container in the refrigerator for up to 4 days.
