Make the best Honey Mustard Chicken Salad with a creamy, tangy dressing. This recipe is fast, high in protein, and perfect for sandwiches, wraps, or meal prepping for the week.

Ingredients

Scale
  • 3 cups cooked, shredded chicken (rotisserie works well)
  • 1/2 cup plain Greek yogurt (for creamy texture)
  • 1/4 cup mayonnaise (optional, for richer flavor)
  • 3 tablespoons Dijon mustard
  • 2 tablespoons yellow mustard
  • 3 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1 ripe avocado, mashed (optional mix-in)
  • 4 slices cooked bacon, crumbled (optional mix-in)

Instructions

  1. Place the shredded chicken in a large mixing bowl.
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise (if using), Dijon mustard, yellow mustard, honey, apple cider vinegar, salt, and pepper until the homemade honey mustard dressing is smooth.
  3. Pour the dressing over the chicken. Mix gently until the chicken is evenly coated.
  4. Stir in the chopped celery, red onion, and fresh parsley.
  5. If you are using optional mix-ins, gently fold in the mashed avocado or crumbled bacon now.
  6. Taste the salad and adjust seasoning if needed.
  7. Cover the bowl and chill in the refrigerator for at least 15 minutes before serving to allow flavors to blend.
  8. Serve this high protein salad on lettuce cups, whole-grain bread for sandwiches, or alongside crackers.

Notes

  • For a no-mayo chicken salad version, substitute the mayonnaise with an extra 1/4 cup of Greek yogurt or use mashed avocado as the primary binder.
  • To make this recipe even faster, use pre-cooked chicken breast leftovers. This makes it an easy 10 minute chicken salad.
  • This salad keeps well for up to 4 days when stored in an airtight container in the refrigerator, making it excellent for high protein meal prep.
  • If you prefer a sweeter profile, increase the honey by one teaspoon.
