A simple and delicious lasagna recipe using cottage cheese for a creamy texture and high protein content. Perfect for a comforting family dinner.

  • 1 pound lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 1/2 cup water
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) container cottage cheese
  • 1 egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 12 lasagna noodles, cooked and drained
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef with the chopped onion and minced garlic. Drain off any excess grease.
  3. Stir in the crushed tomatoes, tomato paste, water, basil, oregano, salt, and pepper. Simmer for at least 15 minutes, stirring occasionally.
  4. In a medium bowl, combine the cottage cheese, beaten egg, and Parmesan cheese. Mix well.
  5. Spread about 1 cup of the meat sauce in the bottom of a 9×13 inch baking dish.
  6. Arrange 3 lasagna noodles over the sauce.
  7. Spread half of the cottage cheese mixture over the noodles.
  8. Sprinkle 1 cup of mozzarella cheese over the cottage cheese mixture.
  9. Spoon about 1.5 cups of meat sauce over the mozzarella.
  10. Repeat the layers: 3 noodles, the remaining cottage cheese mixture, 1 cup mozzarella, and 1.5 cups meat sauce.
  11. Top with the remaining 3 noodles, the rest of the meat sauce, and the remaining 1 cup of mozzarella cheese.
  12. Cover the baking dish with aluminum foil.
  13. Bake for 25 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the cheese is melted and bubbly and the lasagna is heated through.
  14. Let the lasagna stand for 10 minutes before serving.

Notes

  • For a smoother cottage cheese filling, you can blend it briefly in a food processor.
  • If you prefer a richer flavor, you can add a pinch of nutmeg to the cottage cheese mixture.
  • This lasagna freezes well. Let it cool completely before wrapping tightly and freezing.
