A simple and flavorful recipe for crispy, juicy lemon pepper chicken thighs, perfect for a quick weeknight family dinner.

  • 1.5 lbs bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon lemon pepper seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels. This helps the skin get crispy.
  3. In a small bowl, mix together the olive oil, lemon pepper seasoning, garlic powder, salt, and black pepper.
  4. Rub the seasoning mixture all over the chicken thighs, making sure to get under the skin if possible.
  5. Arrange the chicken thighs in a single layer in a baking dish or on a rimmed baking sheet.
  6. Place the lemon slices around the chicken.
  7. Bake for 35-45 minutes, or until the chicken is cooked through and the skin is golden brown and crispy. The internal temperature should reach 165°F (74°C).
  8. Let the chicken rest for 5 minutes before serving.

Notes

  • For extra crispy skin, you can broil the chicken for the last 2-3 minutes of cooking, watching carefully to prevent burning.
  • Serve with pan juices spooned over the chicken.
