1.5 lb pork tenderloin
2 tbsp olive oil
1/4 cup Dijon mustard
3 tbsp maple syrup
1 tbsp soy sauce
1 tsp garlic powder
1/2 tsp black pepper
1/4 tsp salt
Instructions
Preheat your oven to 400°F (200°C).
Pat the pork tenderloin dry with paper towels. Season generously with salt and pepper.
In a small bowl, whisk together Dijon mustard, maple syrup, soy sauce, and garlic powder to create the glaze.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
Brush about half of the maple Dijon glaze over the top of the pork tenderloin.
Transfer the skillet to the preheated oven.
Roast for 15-20 minutes, or until an instant-read thermometer inserted into the thickest part registers 145°F (63°C).
Brush with the remaining glaze during the last 5 minutes of cooking.
Remove the pork from the oven and let it rest for 5-10 minutes before slicing.
Notes
For a make-ahead option, prepare the glaze and trim the pork the day before.
You can substitute honey for maple syrup if needed.
