Make mornings simple with these High-Protein McGriddle Bites. This recipe combines savory sausage and sweet maple flavor in convenient, freezer-friendly muffin form, perfect for quick grab-and-go breakfasts.

  • 1 cup Kodiak pancake mix (or your favorite high-protein mix)
  • 1 large egg
  • 1/2 cup milk (dairy or non-dairy)
  • 1 tablespoon maple syrup
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup cooked, crumbled breakfast sausage
  • 1/2 cup shredded cheddar cheese
  • Cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin with cooking spray.
  2. In a medium bowl, whisk together the Kodiak pancake mix, egg, milk, maple syrup, baking powder, and salt until just combined. Do not overmix; a few lumps are fine.
  3. Gently fold in the crumbled cooked sausage and shredded cheddar cheese into the batter.
  4. Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 15 to 18 minutes, or until a toothpick inserted into the center of a bite comes out clean.
  6. Let the McGriddle Bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  7. For meal prep, store cooled bites in an airtight container in the refrigerator for up to 4 days or freeze for longer storage. Reheat in the microwave or toaster oven.

Notes

  • To make these sweeter, add 1 extra teaspoon of maple syrup to the batter.
  • You can substitute turkey sausage for pork sausage to adjust the fat content.
  • These are excellent served warm with a side of maple syrup for dipping.
  • For the best freezer results, cool completely before placing them in a freezer-safe bag or container.
