A bright, fluffy, and herb-infused rice side dish with a zesty lemon flavor, perfect for pairing with grilled meats, seafood, or vegetable mains.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup long-grain white rice, rinsed
  • 2 cups low-sodium vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add the rinsed rice and stir for 1 minute until lightly toasted.
  3. Pour in the vegetable broth, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed and rice is tender.
  5. Remove from heat and let stand, covered, for 5 minutes.
  6. Fluff the rice with a fork. Stir in the chopped parsley, dill, lemon zest, and lemon juice.
  7. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of garlic powder or onion powder with the salt and pepper.
  • Adjust the amount of lemon zest and juice to your preference.
  • This rice pairs well with grilled chicken, fish, or lamb.
